A little rack of lamb for lunch


During a late evening supermarket trip (primarily to stack up on booze for my Mexican visitor's stay) we found a scrumptious-looking rack of lamb in the discount section. And I do love a bargain, so decided to have it as a vaguely posh lunch the next day.

In our preoccupation and carefully unpacking (and sampling) our alcoholic purchases, we neglected to marinate the ribs the night before, so they only had a couple of hours in a plastic bag at room temperature, but my were they still tasty. Served with some new potatoes we had lying about and some beetroot salad with basil oil, it was a lovely light lunch with a touch of class.
